Tasting Notes
In the glass, the 2023 Cuvée Saint Urban shows a pale lemon colour with green reflections, hinting at its youthful energy and freshness. The nose is bright and expressive, with notes of lemon zest, green apple and white flowers layered over crushed stone, fresh herbs and a subtle almond nuance.
On the palate, this Aligoté is taut and lively, with a racy line of acidity that gives the wine excellent tension and lift. Flavours of citrus, green pear and gooseberry mingle with saline minerality and a faint, savoury chalkiness that lingers on the finish. The texture is clean and linear, yet there is enough mid-palate weight to keep it from feeling austere. Best enjoyed in its youth for maximum vibrancy, it will nonetheless develop a bit more complexity and roundness over the next 2–4 years.
Production
Sourced from carefully selected Bourgogne Aligoté parcels in the cooler reaches of northern Burgundy, this wine reflects the limestone-rich soils and temperate climate of the region. The vines draw depth and minerality from the stony subsoils, while the relatively cool nights preserve natural acidity and aromatic clarity. Grapes are harvested at optimal ripeness, typically by hand to ensure careful selection and to keep the fruit intact. In the cellar, Jean Fournier favours a gentle, minimalist approach: the grapes are pressed delicately, the must is settled and then fermented at controlled temperatures to highlight purity and precision of fruit. Aging takes place in a combination of stainless steel and neutral vessels, without heavy oak influence, to preserve the crisp, mineral-driven character that defines classic Aligoté.
Food & Serving
This Bourgogne Aligoté is a natural partner for classic Burgundian apéritifs and seafood. Serve it alongside freshly shucked oysters, shrimp, ceviche, grilled fish, goat cheese, sushi, or simple dishes like roast chicken with lemon and herbs. It also works beautifully with charcuterie and lightly dressed salads, and is the ideal base wine for a traditional Kir with crème de cassis. For optimal enjoyment, serve well-chilled at around 8–10°C (46–50°F). Decanting is not necessary, but opening the bottle 15–20 minutes before serving allows the aromatics to open up nicely.
