Jean Claude Mouzon Champagne Reverse Brut is a finely crafted non-vintage Champagne that plays on contrast and balance in the glass. Built on an exact 50/50 blend of black and white grapes, it marries generous fruit with a precise, racy freshness. Composed largely of réserve wines, Reverse Brut is designed to showcase both immediate pleasure and the complexity that comes with patient aging in the cellar.

Tasting Notes
In the glass, Reverse Brut shows a bright, pale straw color with fine, persistent bubbles that form a delicate mousse. The nose opens with pure aromas of white orchard fruits—pear, apple, and white peach—layered with zesty lemon and grapefruit, hints of citrus peel, and subtle notes of fresh brioche and chalky minerality. On the palate, this Champagne is crisp and lively yet surprisingly supple, with that “soft fizz” feel that makes each sip effortless. The Chardonnay brings tension, elegance, and a clean citrus line, while the Pinot Noir (Pinot Nero) adds breadth, texture, and a gentle red-fruited undertone in the background. Expect flavors of green apple, pear, and lemon zest, supported by touches of almond and a saline, chalky finish that feels very true to the Champagne region. Thanks to its high proportion of réserve wines, it already shows a harmonious, rounded profile, but it will comfortably develop a bit more nuance over the next 2–4 years if stored well.

Production
Reverse Brut is rooted in classic Champagne terroir, where chalk and limestone soils help deliver the wine’s hallmark tension and minerality. The blend is an exact balance of Chardonnay and Pinot Noir (50/50), with around 60% coming from carefully selected réserve wines kept back from previous vintages to build depth and consistency. Grapes are typically harvested by hand, parcel by parcel, to preserve fruit quality and allow for precise selections. After gentle pressing and cool fermentation, the base wines are blended and bottled for secondary fermentation, then aged on the lees to gain texture and complexity before disgorgement. The result is a clear, elegant Champagne that lets both the terroir and the art of blending shine through.

Food & Serving
This Champagne is highly versatile at the table. Its bright acidity and citrus-driven profile make it a natural partner for oysters, scallops, sushi, and lightly cooked shellfish, while the subtle richness from the réserve wines works beautifully with dishes like chicken terrine, soft cheeses (Brie, Camembert), or a simple goat cheese tart. For aperitif, serve well-chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or in an open bottle is enough to let the aromas unfurl; full decanting is not necessary, but pouring into proper tulip-shaped Champagne glasses will highlight its delicate complexity.
