Jacquesson Cuvée 738 Dégorgement Tardif is a refined non-vintage Champagne built around the 2010 harvest and enhanced with 33% reserve wines for added depth and nuance. With its high proportion of Chardonnay and late disgorgement in July 2019, it offers a particularly fresh, layered expression of the house style, rooted in Jacquesson’s long tradition of crafting numbered cuvées rather than a fixed non-vintage blend.

Tasting Notes
In the glass, it shows a bright, elegant golden hue with a fine, persistent mousse. The nose is expressive and fresh, opening with white flowers, almond, and dried fruit, followed by subtle baked citrus and delicate brioche tones from extended maturation. On the palate, it feels lively and precise, with a clean, mineral-driven core and beautifully balanced acidity. The reserve wines bring extra breadth and complexity, while the late disgorgement preserves freshness and gives the wine a more integrated, nuanced texture. It has very good aging potential and should continue to develop tertiary complexity over time.

Production
Cuvée 738 is based on the 2010 vintage and includes 33% reserve wines, with the final blend composed of 61% Chardonnay, 21% Pinot Meunier, and 18% Pinot Noir. The grapes are gently pressed in vertical basket presses to minimize extraction of harsh phenolics, and the wine is aged in oak for up to 24 months before bottling and secondary fermentation. Jacquesson’s numbered 700 series is designed to express the character of each base year while using reserve wines to fine-tune structure and complexity without losing vintage identity.

Food & Serving
This Champagne is an excellent match for oysters, scallops, sushi, sashimi, and other refined seafood dishes, as well as poultry, veal, or creamy soft cheeses. Serve well chilled at around 8–10°C, and decanting is not recommended; instead, allow it a few minutes in the glass to open naturally.
