This cuvée stands out for its mineral-driven elegance, low dosage philosophy, and the house’s meticulous, terroir-first approach that has made Jacquesson a reference among serious Champagne lovers.

Tasting Notes
In the glass, the 2013 Avize Champ Caïn is a luminous, pale straw-gold with a fine, persistent bead that signals both energy and finesse. On the nose, it opens with crystalline citrus—lemon zest and grapefruit—layered over white flowers, green apple, and pear, with deeper notes of freshly baked brioche, toasted hazelnut, chalk dust, and a subtle hint of salty sea breeze. The palate is taut and focused yet texturally refined, with a vibrant spine of acidity that carries flavors of citrus, crisp orchard fruit, and stone fruit wrapped in a distinct chalky minerality. Nuances of patisserie, toasted almonds, and gentle spice from élevage add complexity without ever overshadowing the purity of the fruit. The finish is long, dry, and mouthwateringly saline, promising further complexity with time. Given the vintage and Jacquesson’s structured style, this 2013 has excellent aging potential: it is already compelling now but should evolve beautifully over the next 8–12 years, gaining richness, depth, and more pronounced tertiary notes.

Production
Avize Champ Caïn is a single parcel in the grand cru village of Avize, planted to Chardonnay on classic Côte des Blancs chalk, which imparts the wine’s hallmark tension and minerality. The cool 2013 season favored slow, even ripening and good acidity, allowing for a precise expression of the cru. Grapes are hand-harvested at optimal maturity, carefully sorted, and gently pressed. Jacquesson ferments the base wines with indigenous yeasts, largely in large oak foudres, where they also rest on their lees to build texture and complexity, with minimal intervention. The Champagne then undergoes second fermentation in bottle and extended lees aging before disgorgement, finished with a low dosage to keep the expression of terroir and vintage as transparent as possible.

Food & Serving
This Champagne’s tension and chalky precision make it a superb partner for refined seafood and delicate dishes. Think oysters, caviar, sashimi, scallop carpaccio, turbot or sole with beurre blanc, or lobster with a light citrus or herb butter. It also shines with fine poultry, creamy cheeses like young Comté or aged goat’s cheese, and elegant vegetable dishes with a touch of cream or truffle. Serve well-chilled but not icy, ideally around 9–11°C (48–52°F), to allow the aromatics to open. A gentle decant or pouring into a larger-bowled white wine glass 15–20 minutes before serving can help the wine express its full complexity.
