Jacopo Biondi Santi Schidione 2015 is a powerful and refined Super Tuscan that unites the heritage of Sangiovese with the depth of Cabernet Sauvignon and Merlot. Crafted at Castello di Montepò in southern Tuscany, this is a statement wine designed for both immediate pleasure and long-term aging. Schidione stands out for its noble pedigree, meticulous craftsmanship, and its ability to express Maremma’s sunny, wild landscape in a polished, classic style.

Tasting Notes
In the glass, Schidione 2015 shows a deep, intense ruby red hue with garnet highlights beginning to emerge at the rim, hinting at its gradual evolution. The nose is complex and layered: ripe black cherry and dark plum are intertwined with cassis, dried violet, Mediterranean herbs, tobacco leaf, leather, and sweet spices from quality French oak—think cedar, vanilla, and a touch of dark chocolate. On the palate, the wine is full-bodied yet composed, with a firm backbone of ripe tannins and vibrant acidity that reflects the Sangiovese core. Flavours of blackcurrant, black cherry and wild berries are supported by notes of espresso, graphite, balsamic hints and a subtle savoury, earthy undertone. The finish is long and persistent, with spice and mineral notes lingering. The 2015 vintage, from a warm and generous year in Tuscany, is already approachable with some aeration, but this wine has significant aging potential: properly cellared, it should evolve gracefully for 15–20 years from vintage, gaining further complexity, tertiary nuances and silkier texture.

Production
Schidione 2015 comes from vineyards surrounding Castello di Montepò in the Maremma area of southern Tuscany, where warm days, cool nights and coastal breezes help Cabernet Sauvignon, Merlot and Sangiovese achieve excellent ripeness while retaining freshness. The soils are predominantly rocky and calcareous with galestro and marl, promoting deep root systems and naturally low yields, which in turn concentrate flavour and structure. Grapes are carefully selected and typically harvested by hand at optimal ripeness, parcel by parcel. After gentle crushing and fermentation in temperature-controlled tanks, the wine undergoes maceration to extract colour, tannin and aromatic intensity. It is then aged in small French oak barriques (a mix of new and used) for an extended period—often around 16–18 months—followed by additional bottle aging before release, allowing the various components of the blend to integrate harmoniously.

Food & Serving
This is a serious red that calls for equally flavourful cuisine. Think Tuscan-style bistecca alla fiorentina, grilled ribeye, slow-braised beef or lamb shanks, game dishes like venison or wild boar ragù, and aged hard cheeses such as Parmigiano Reggiano or Pecorino Toscano. It also pairs beautifully with mushroom-based dishes, truffle pasta and rich, oven-roasted root vegetables. Serve at 16–18°C (60–64°F) to highlight both fruit and structure. Decanting is strongly recommended—give it at least 1–2 hours in a decanter if opened now, especially for a more youthful, structured bottle, to allow the bouquet to open and the tannins to soften.
