On the palate, the wine is medium-bodied and precise, with pure red-fruited tension and a fine-boned structure. Confuron Jean Jacques works with careful vineyard management, favouring moderate yields and hand-harvesting to ensure only perfectly ripe, healthy Pinot Noir clusters are brought to the cellar. Fermentation typically takes place in temperature-controlled vats with a proportion of whole bunches depending on vintage character, promoting aromatic lift and fine tannin structure. The wine is then aged in French oak barrels, with a judicious use of new wood, to preserve purity of fruit and terroir expression while adding gentle texture and complexity.
