Isole e Olena Cabernet Sauvignon 2014 (Collezione Privata) is a refined Tuscan expression of Bordeaux varieties, crafted in a cooler, elegant vintage. Sourced from high-altitude vineyards in the heart of Chianti Classico, it marries Italian freshness with international structure, resulting in a wine of precision, tension, and depth. Small additions of Cabernet Franc, Merlot and Petit Verdot add layers of complexity to this limited-release bottling, with only around 6,000 bottles produced.
Tasting Notes
In the glass, the 2014 Isole e Olena Cabernet Sauvignon shows a deep ruby core with garnet hues developing at the rim, reflecting both its grape variety and a decade of evolution. The nose opens with distinctly savory, slightly herbal tones—garden herbs, thyme, sage and a whisper of eucalyptus—alongside cassis, black cherry, graphite and hints of cedar and tobacco. There is a lifted, almost medicinal note that speaks to the cool vintage, giving the bouquet a sharp, focused profile.
On the palate, the wine is composed, medium to full-bodied and beautifully streamlined. Dark berry fruit—blackcurrant, blackberry and macerated plum—is wrapped around a spine of fresh acidity and finely etched tannins. That characteristic “nervous energy” shows as tension and vibrancy rather than weight, with subtle notes of cocoa, pencil shavings, spice box and dried violets emerging with air. The 2014 vintage delivers a compact, linear mouthfeel, making the wine particularly graceful rather than opulent. Already in a lovely drinking window, it still has the structure to age gracefully for another 8–10 years, developing more tertiary notes of leather, forest floor and cigar box over time.
Production
The grapes for this Cabernet Sauvignon Collezione Privata come from Isole e Olena’s estate vineyards in the western part of Chianti Classico, where higher elevations and strong diurnal temperature swings help preserve acidity and aromatic detail. The soils are a mix of galestro and alberese (marl and limestone), providing excellent drainage and minerality, while the cooler 2014 season enhanced the wine’s herbal and savory nuances. Grapes are harvested by hand, with careful selection in the vineyard and again at the winery to ensure only perfectly ripe clusters are used. Fermentation takes place in temperature-controlled tanks, with gentle extraction to favor finesse over sheer power. The wine is then aged in French oak barriques (a portion new), allowing the structure to harmonize and the bouquet to gain complexity without overwhelming the fruit.

This 2014 Cabernet Sauvignon pairs beautifully with refined, savory dishes rather than heavy or overly rich cuisine. Think grilled or roast lamb with rosemary, tagliata di manzo, bistecca alla fiorentina, braised short ribs, or game birds like guinea fowl and pheasant. It also works well with aged hard cheeses such as Parmigiano Reggiano or Pecorino Toscano and truffle-infused dishes that echo its earthy, herbal notes. Serve at 16–18°C (60–64°F) to highlight its freshness and aromatic complexity. A decant of 45–60 minutes is recommended to allow the slightly nervous, tight-knit profile to relax and reveal its full spectrum of dark fruit, herbs and spice.
