Tasting Notes
In the glass, the 2021 Caberlot shows a deep, vibrant ruby hue with youthful brightness at the rim, hinting at both concentration and freshness. The nose is layered and compelling: red cherries and ripe plums unfold alongside blood orange zest, sweet and exotic spices, black and red licorice, cedar, tobacco leaf and a touch of new leather, all wrapped in a subtle, refined oak frame.
On the palate, the wine is simultaneously intense and precise, with a core of succulent red and dark fruit supported by fine, chalky tannins and a vivid line of acidity. Flavors of cherry, plum and wild berries are interwoven with notes of citrus peel, graphite, dried herbs and a distinctive stony minerality that carries through to the long, resonant finish. Despite its depth, the 2021 is not heavy or opulent; instead, it feels agile and energetic, with great tension and definition. This magnum will benefit from several years of cellaring and has excellent aging potential—easily 15–20 years from the vintage in this large format, gaining even more complexity and refinement over time.
Production
Il Carnasciale sits in the hills of southeastern Tuscany in the Valdarno area, on elevated slopes with poor, stony soils rich in limestone and galestro that naturally limit yields and accentuate the wine’s mineral profile. The estate farms its tiny vineyards with meticulous, low-yield practices and hand-harvests the fruit at optimal ripeness, often in small passes through the rows to ensure only perfectly mature clusters are selected. In the cellar, the proprietary Caberlot grape—an extremely rare crossing of Cabernet Franc and Merlot—is vinified in small batches, typically with temperature-controlled fermentation to preserve aromatics and structure, followed by élevage in French oak barriques (a portion new) to add texture and complexity without overwhelming the purity of the fruit. The 2021 was then bottled in limited quantities, including magnums, to encourage slow, graceful development.
Food & Serving
Caberlot 2021 is a natural match for refined meat dishes and richly flavored Tuscan-inspired cuisine. Think bistecca alla fiorentina, grilled or roast lamb with herbs, game birds, braised veal, or slow-cooked beef ragù over pappardelle. It also pairs beautifully with aged Pecorino, Parmigiano Reggiano, truffle dishes and earthy mushroom preparations. Serve at 16–18°C (60–64°F); in magnum format, the wine benefits from a generous decant of 1–2 hours in its youth to allow the aromatics to fully unfurl and the tannins to soften. As it ages, shorter decanting or simply opening the bottle ahead of time will be sufficient to show the wine at its best.
