This combination of stony, well-drained soils and a marked day–night temperature contrast helps preserve acidity and aromatic intensity. The Ribolla Gialla grapes are generally harvested in the cooler hours to protect freshness, then gently pressed to avoid excessive phenolic extraction. Fermentation takes place in temperature-controlled stainless-steel tanks to retain the grape’s delicate floral and citrus notes, with the wine resting on fine lees for a short period to add texture and subtle complexity without compromising its crisp, linear profile.
