Tasting Notes
In the glass, the 2022 Saint-Romain Blanc is pale lemon with silvery highlights, hinting at its youthful energy and tension. The nose is pure and lifted, offering notes of lemon zest, green apple, white peach and pear, layered with white flowers, crushed chalk, and a discreet touch of toasted hazelnut and fresh butter from sensitive oak handling. On the palate, this is a finely balanced Chardonnay: brisk, saline acidity meets a supple, mid-weight texture, creating both refreshment and complexity. Citrus and orchard fruit are wrapped around a core of stony minerality, with subtle hints of brioche, almond and a light creaminess from lees aging. The finish is clean, long and mouthwatering, with a chalky snap that invites another sip. Production
Saint-Romain sits in a cooler, higher sector of the Côte de Beaune, with vineyards rooted in limestone-rich, rocky soils that naturally favor tension, finesse, and pronounced minerality in Chardonnay. Hubert Lignier works with low yields and carefully tended vines, typically following sustainable, low-intervention practices to preserve the character of each parcel. Grapes are hand-harvested at optimal ripeness to retain freshness, then gently pressed and fermented with indigenous yeasts. The wine is traditionally aged in oak barrels (with only a modest proportion of new oak) on its fine lees, allowing texture and depth to develop without masking the clarity of fruit and terroir. Bottling is done with minimal handling to keep the wine’s natural vibrancy intact.

This Saint-Romain Blanc is a versatile partner at the table, shining alongside dishes that echo its finesse and minerality. Think oysters, scallops, and grilled white fish, or more classic Burgundian pairings such as roast chicken, veal in a light cream sauce, and seared pork chops with herbs. It also works beautifully with goat cheese, young Comté, and mild, creamy cheeses. Serve well-chilled but not icy, ideally around 10–12 °C (50–54 °F), to allow the aromatics to unfurl. A brief 20–30 minutes in a carafe can help the wine open up if enjoyed in its youth.
