Tasting Notes
In the glass, it typically shows a deep amber hue, reflecting its cask-strength concentration and time in oak. The nose opens with heather honey, dried fruit, warm spice, and gentle smoke, with hints of oak, citrus peel, and coastal salinity beneath. On the palate, it is rich and layered, delivering dark caramel, raisins, vanilla, peppery spice, and Highland Park’s signature earthy peat smoke. The texture is full and warming, with a long, persistent finish that echoes heather, toasted oak, and soft smoke. It has excellent aging potential in the glass and can evolve beautifully with a few minutes of air, or even a drop of water to reveal more complexity.

Produced on Orkney, where the cool island climate and maritime influence shape the whisky’s character, Highland Park draws on malted barley, traditional floor malting, and peat cut from local heather-rich bogs. The cask-strength bottling emphasizes the whisky in its purest form, with maturation in carefully selected oak casks that add depth, spice, and sweetness without masking the distillery’s distinctive island profile.

Food & Serving
Best enjoyed neat or with a small splash of water to open up the aromatics. It pairs well with smoked salmon, grilled lamb, mature cheddar, blue cheese, or dark chocolate desserts, and should be served at room temperature. Decanting is not necessary, but allowing the whisky to rest in the glass for a few minutes is recommended.
