The cool climate and deep chalk subsoils enhance finesse, minerality, and tension in the grapes. Fruit is typically harvested by hand to ensure careful selection of healthy, perfectly ripe Chardonnay clusters. In the cellar, the must is gently pressed and fermented in temperature-controlled vessels, preserving freshness and aromatic clarity. The base wines are blended across vintages to achieve consistency and complexity, then undergo secondary fermentation in bottle following the traditional Champagne method. Extended aging on the lees builds texture and fine mousse, while the wine is disgorged without dosage (Brut Nature), leaving no residual sugar so that the terroir of Oger and the natural balance of the wine are allowed to shine.
