Domaine Henri Gouges farms these old-vine Pinot Noir parcels traditionally, with meticulous vineyard work and low yields to concentrate flavor and preserve terroir expression. Harvesting is done by hand to ensure careful selection of perfectly ripe, healthy grapes. In the cellar, the fruit undergoes classic Burgundian vinification: destemming (typically with a portion of whole bunches depending on the vintage), fermentation in open vats, then élevage in French oak barrels for a period sufficient to develop depth and complexity without overshadowing the purity of the fruit or the character of the site.
