Tasting Notes
In the glass, the wine shows a deep, full ruby hue with subtle purple highlights at the rim, hinting at both youth and concentration. The nose opens with pure, vivid fruit: blackcurrant, wild strawberry, and black cherry, gradually unfolding with air to reveal more complex layers of leather, truffle, forest floor, and ripe plum.
On the palate, this is robust, firmly structured, and authoritative, with a core of dark red and black fruit framed by vibrant acidity and gripping yet refined tannins. Notes of black cherry, cassis, and red berries are intertwined with savory undertones of undergrowth, spice, and a touch of mineral-driven earthiness. The finish is long, persistent, and built on structure rather than sheer opulence, promising excellent development in bottle. Production
Les Saint Georges is one of Nuits-Saint-Georges’ most celebrated premier cru vineyards, situated on well-draining limestone and marl soils that confer both structure and a refined mineral backbone to the wine. Domaine Henri Gouges farms these old-vine Pinot Noir parcels traditionally, with meticulous vineyard work and low yields to concentrate flavor and preserve terroir expression. Harvesting is done by hand to ensure careful selection of perfectly ripe, healthy grapes. In the cellar, the fruit undergoes classic Burgundian vinification: destemming (typically with a portion of whole bunches depending on the vintage), fermentation in open vats, then élevage in French oak barrels for a period sufficient to develop depth and complexity without overshadowing the purity of the fruit or the character of the site.

This is a natural match for substantial, flavorful dishes—think roasted lamb, dry-aged beef, venison, or other game, as well as rich poultry dishes like duck with a red-wine or berry reduction. Earthy ingredients such as mushrooms, truffles, and root vegetables, or classic Burgundian fare like boeuf bourguignon, will mirror the wine’s savory depth. Serve at 16–18°C (about 60–64°F) in large Burgundy stems to allow the aromatics to blossom. Decanting for 1–2 hours in its youth is recommended to soften the tannins and open up the bouquet; with significant bottle age, a gentle, shorter decant primarily to remove sediment will be sufficient.
