The vines, rooted in this classic Côte de Nuits terroir, draw both power and minerality from the slope. Henri Gouges is known for traditional, meticulous vineyard work, typically harvesting by hand to ensure only perfectly ripe, healthy Pinot Noir grapes are selected. In the cellar, the approach is equally classic: gentle destemming and fermentation in open vats with careful extraction, followed by maturation in French oak barrels (a restrained proportion new) to preserve the purity of fruit and terroir expression rather than dominate it with wood.
