Tasting Notes
Deep ruby in the glass, the wine is refined and expressive from the start. Aromas of blackcurrant, ripe plum, cedar, graphite, and subtle floral notes unfold beautifully, supported by hints of tobacco, spice, and warm earth. On the palate, it is silky yet concentrated, combining fine tannins with fresh acidity and layers of dark fruit, cassis, and mineral complexity. The finish is long and poised, with excellent aging potential; this is a wine that will continue to evolve gracefully over the next 15 to 25 years, and likely longer in a strong cellar.

Production
Haut-Bailly’s vineyards are planted on the gravelly soils of Graves, where excellent drainage and a tempering influence from the nearby Atlantic help preserve freshness and structure. The grapes are typically harvested by hand and vinified with great care, emphasizing parcel selection, gentle extraction, and aging in oak barrels to preserve purity and complexity.

Food & Serving
This wine pairs beautifully with roasted lamb, beef tenderloin, duck, venison, and dishes featuring mushrooms or truffle. Serve at around 16–18°C, and decant for 1 to 2 hours if drinking young to allow the aromas and structure to open fully.
