Haderburg Metodo Classico Pas Dosé Millesimato Magnum 2020 is a finely crafted Italian sparkling wine from the cool alpine slopes of Trentino-Alto Adige. Made exclusively in the traditional method and bottled in magnum, it offers extra refinement, complexity and aging potential compared to standard formats. This vintage-dated cuvée, crafted from Chardonnay and Pinot Nero, reflects Haderburg’s long-standing commitment to purity, precision, and terroir expression with zero dosage. Uncompromisingly dry and classically structured, this Pas Dosé is all about tension, minerality and finesse rather than sweetness. Haderburg has been one of the pioneers of high-quality metodo classico in Alto Adige since the late 20th century, helping to elevate the region’s reputation for serious sparkling wines that can rival many traditional-method benchmarks.

Tasting Notes
In the glass, the 2020 Pas Dosé Millesimato in magnum shows a luminous straw-yellow color with subtle green reflections and an exceptionally fine, persistent perlage. The mousse is creamy yet energetic, forming a delicate crown at the rim. The nose is precise and layered: notes of green and yellow apple, Williams pear and lemon zest are interwoven with hints of white flowers, fresh bread crust, toasted hazelnut and a faint smoky-mineral edge. On the palate, it is bone dry, taut and vertical, with a lively, mouthwatering acidity and a distinctly chalky, stony backbone. Flavors of citrus, crunchy orchard fruit and light brioche evolve toward nuances of almond, sea salt and wet stone on the long, linear finish. The magnum format emphasizes freshness and slow development; while already highly enjoyable now, this 2020 vintage has very good aging potential and should gain complexity and creaminess over the next 5–8+ years.

Production
The grapes for Haderburg Metodo Classico Pas Dosé Millesimato are sourced from estate vineyards in Trentino-Alto Adige, where cool alpine nights and warm, sunny days help Chardonnay and Pinot Nero ripen slowly while retaining vibrant acidity. The vines typically grow on steep slopes with calcareous and porphyry-rich soils, imparting a clear mineral signature to the wine. Harvest is carried out by hand at carefully judged ripeness, with bunches selected in the vineyard to ensure only healthy, perfectly balanced fruit is used. After gentle pressing, the must undergoes primary fermentation in temperature-controlled stainless steel, sometimes complemented by partial fermentation or élevage in large neutral oak to add texture and complexity. The base wines are then assembled and bottled for the second fermentation in the traditional metodo classico. The wine matures on its lees in bottle for an extended period before disgorgement, with no dosage added, preserving the wine’s natural structure, purity and expression of terroir.

Food & Serving
This Pas Dosé Magnum is a versatile partner at the table, particularly well suited to refined, clean-flavored dishes. It pairs beautifully with oysters, crudo, carpaccio of sea bass or tuna, and simply grilled fish with lemon and herbs. It also complements sushi and sashimi, tempura, steamed shellfish, and elegant vegetable dishes such as asparagus, artichokes or seasonal salads, as well as soft-ripened cheeses and delicate poultry preparations. Serve well chilled, ideally around 8–10 °C (46–50 °F). In magnum, a brief aeration is beneficial: opening the bottle 10–15 minutes before serving, or pouring the first glass to let it stretch in the glass, is usually sufficient; decanting is generally not necessary, but a gentle carafe service can work if you seek a slightly broader, more open profile.
