Production
The grapes for this Signatur Single Vineyard Riesling come from Gustavshof’s own estate vineyards in Rheinhessen, about 30 km south of Mainz, where the vines grow on limestone-rich soils that naturally enhance acidity, finesse and mineral character. The estate is farmed according to Demeter-certified biodynamic principles, with a strong focus on soil vitality, biodiversity and closed-loop farming: flowering cover crops, diverse plant species and self-produced compost play a central role in maintaining a living, biologically active soil. Harvest is typically carried out by hand to ensure careful selection of healthy, optimally ripe Riesling grapes. In the cellar, the philosophy is to let the vineyard speak—usually through gentle pressing, temperature-controlled fermentation and minimal intervention, often with extended time on the fine lees to build texture and complexity without overshadowing the wine’s natural freshness.
