Tasting Notes
In the glass, this 2013 Riesling Sekt shows a luminous straw to pale gold hue with a fine, persistent bead that speaks to its extended maturation on the lees. The nose is complex and fully developed, revealing classic matured Riesling notes of petrol and flint alongside ripe mirabelle plum, apricot and a hint of orange zest. Layers of autolytic character evoke fresh brioche, pastry dough and a subtle cellar-like yeasty aroma. The base wines that launched Griesel’s sparkling project were vinified with meticulous care, with roughly 70% matured in stainless steel to preserve purity and tension, and 30% aged in 500-liter tonneaux to add subtle texture and complexity. After the traditional method secondary fermentation in bottle, the wine spent several years resting on its lees, developing its fine mousse and brioche-like autolytic profile. Bottled as Dosage Zero, it is left completely dry, allowing the varietal Riesling character and terroir to shine without the influence of added sugar.

This ultra-dry, structured Riesling Sekt is a superb partner for refined, savory dishes. It pairs beautifully with oysters, scallops, trout or char, sushi and sashimi, as well as lightly spiced Asian cuisine where citrus and ginger feature.
