Tasting Notes
In the glass, Greywacke Sauvignon Blanc 2024 shows a bright, pale straw colour with subtle green hues, hinting at its youthful freshness. The nose is immediately expressive and layered: think ripe citrus, lime zest and grapefruit, mingling with passionfruit, gooseberry, and a touch of white peach. Underneath the fruit sit classic Marlborough notes of fresh herbs, lemongrass and tomato leaf, lifted by a gentle, stony minerality.
On the palate, the wine is dry, crisp and intensely flavoured, with vibrant acidity that keeps everything mouth-watering and precise. Juicy tropical fruits and citrus are balanced by a savoury, almost saline edge, giving depth and a long, clean finish. The 2024 vintage drinks beautifully in its youth, but has the structure to evolve gracefully over the next 2–4 years, gaining a slightly rounder texture and more pronounced mineral and herbal nuances with short-term cellaring.
Production
Sourced primarily from select vineyard sites in Marlborough, Greywacke Sauvignon Blanc 2024 reflects the region’s cool maritime climate and diverse, free-draining soils—many influenced by the greywacke bedrock that lends the winery its name. Grapes are typically harvested in the cool of night or early morning to preserve freshness and aromatic intensity, then brought quickly to the winery. After gentle pressing, the juice is mostly fermented in stainless steel at controlled, cool temperatures to lock in bright fruit and crisp acidity, while a portion may be fermented with wild yeasts in older oak or large vessels to add subtle texture and complexity. Extended contact on fine lees helps build mouthfeel and integration without compromising the wine’s hallmark purity.

Greywacke Sauvignon Blanc 2024 is a natural partner for fresh, vibrant cuisine—think oysters, prawns, ceviche, sushi, or simply grilled white fish with citrus and herbs. It also pairs beautifully with goat’s cheese, seasonal salads with asparagus or peas, Vietnamese or Thai dishes with fresh herbs, and light vegetarian plates. Serve well-chilled at around 8–10°C to highlight its aromatic lift and crisp structure. Decanting is not essential, but pouring it into a larger white wine glass and giving it a few minutes in the glass will help the aromatics fully unfold.

Established in the late 2000s and based in Marlborough, the winery takes its name from the region’s ubiquitous greywacke sandstone, a nod to the importance of terroir in shaping wine style.
