Tasting Notes
In the glass, the wine shows a luminous pale gold colour with subtle green highlights, signaling freshness and youth. The nose opens with aromas of ripe pear, crisp apple, and white peach, layered with notes of lemon zest, acacia blossom, and a touch of hazelnut and vanilla from well-judged oak. Hints of chalk, flint, and fresh butter add depth and a distinctly Burgundian character.

Les Buissières is set on Mercurey’s limestone-clay slopes, where Chardonnay thrives in well-drained, mineral-rich soils and a relatively cool climate that preserves acidity. Grapes are typically harvested by hand at optimal ripeness to maintain both freshness and aromatic intensity, with careful sorting to ensure only pristine fruit is used. Vinification generally involves gentle pressing, a controlled fermentation (often partly in oak barrels and partly in tank), and maturation on fine lees to build texture and complexity. A judicious use of French oak—more supportive than dominant—brings structure and subtle spice while allowing the vineyard character and purity of Chardonnay to remain front and centre.

This Mercurey Blanc is an excellent partner for refined dishes such as seared scallops, grilled sea bass, poached turbot, or buttery lobster.
