Tasting Notes
In the glass, this Montagny shows a bright, pale lemon color with glints of green, hinting at its youth and vibrancy. Production
Montagny lies in the Côte Chalonnaise in southern Burgundy, where predominantly limestone and clay-limestone soils give Chardonnay its hallmark tension and minerality. The vineyards for Goichot’s ‘Guignottes’ selection benefit from good exposure and well-drained slopes, helping to achieve ripe, healthy fruit while preserving freshness. Grapes are typically harvested by hand to ensure careful selection of bunches and minimal oxidation, then gently pressed to retain purity of juice. Fermentation takes place in temperature-controlled conditions, often in a mix of stainless steel and selected oak to balance clarity of fruit with subtle texture and structure. The wine is then aged on fine lees, enhancing mouthfeel and complexity without overpowering the delicate character of the Chardonnay.

This Montagny is a versatile partner at the table, particularly well-suited to seafood and lighter dishes. Pair it with oysters, scallops, grilled prawns, or simply prepared white fish, as well as roast chicken, creamy poultry dishes, or mild goat’s and cow’s milk cheeses. It also works beautifully alongside vegetable dishes such as asparagus, leek tart, or a classic mushroom fricassée. Domaine des Guignottes is part of the wider Maison Goichot story, a family enterprise that began humbly in 1947 with André-Marcel Goichot in Merceuil, just a stone’s throw from Beaune. Coming from modest origins as the son of a vineyard worker, André-Marcel painstakingly built the estate from scratch—famously collecting empty bottles from the streets to trade for full bottles from local merchants, eventually acquiring his first plot of vines. Over the decades, the Goichot family has grown from a small local operation into a respected Burgundy house, known for reliable, terroir-expressive wines that span multiple appellations. Rooted firmly in the traditions of the region and enriched by a spirit of ingenuity—embodied also by the family connection to Lucien Loiseau, the inventive creator of the vineyard straddle tractor—the estate today plays a meaningful role in bringing accessible, characterful Burgundy to wine lovers around the world.
