Tasting Notes
In the glass, the 2016 presents a translucent ruby to garnet hue, with a delicate brightness at the rim that hints at finesse rather than power. The nose is generous yet refined: fully ripe raspberry and black heart-cherry lead the way, joined by strawberry preserves, subtle floral tones, a touch of watermelon rind and very gentle smoky nuances – think cool fireplace ash and a hint of bacon or cured meat in the background.
On the palate, this Pinot Noir is all about juicy, layered fruit set against a fine, tightly woven structure. Ripe red berries and dark cherry are wrapped in silky tannins and a fresh, chalky minerality from the limestone soils. The oak is beautifully integrated, supporting the wine rather than dominating it, adding just a whisper of spice and texture. Production
The biodynamic Pinot Noir grapes for this wine come from various premium sites in the Pfalz, all characterized by a high proportion of limestone in the soil – a key factor in the wine’s tension, minerality and elegance. Harvest is carried out by hand to ensure only perfectly ripe, healthy fruit makes it into the cellar. Fermentation occurs spontaneously on the skins with native yeasts, capturing the purest expression of fruit and terroir, followed by a full malolactic conversion to soften the natural acidity. The wine is then matured for about two years in a mix of 225-liter barriques and 500-liter tonneaux, with only a modest proportion of new oak so that wood never overshadows fruit. Finally, it is bottled unfiltered, preserving maximum aroma, texture and authenticity.
Food & Serving
This is a versatile, gastronomic Pinot Noir that pairs beautifully with refined yet comforting dishes. Think roast duck with crispy skin, herb-crusted lamb, veal in mushroom sauces, charcuterie, or earthy dishes featuring porcini, lentils or truffle. It also works well with soft to semi-hard cheeses such as Comté, Tomme or aged goat cheeses. Serve at 14–16°C (57–61°F) to showcase its aromatic complexity and fine structure. A gentle decant of 30–60 minutes can help the wine open up, especially in its youth, revealing more of the smoky and floral nuances.
