This non-vintage cuvée offers a precise, mineral-driven expression of Chardonnay from the heart of Champagne. It’s a bottle for those who appreciate elegance, tension, and the character of terroir-focused grower Champagne over big-house blends.
Tasting Notes
In the glass, this Blanc de Blancs shows a pale lemon color with fine, persistent bubbles forming a delicate mousse. The nose is pure and expressive, with aromas of green apple, lemon zest, white flowers, chalk, and a touch of fresh brioche and almond from time on the lees.
On the palate, it is tense and refined, driven by citrus and orchard fruits layered over a pronounced chalky minerality. Expect flavors of crisp pear, Granny Smith apple, lemon curd and subtle pastry notes, all carried by a vibrant, well-integrated acidity. The finish is long, dry and saline, inviting another sip. As a non-vintage Champagne built on Chardonnay and extended lees aging, it drinks beautifully now but will comfortably develop additional complexity over 3–5 years in bottle, gaining more brioche, hazelnut and honeyed nuances.

The Chardonnay for this cuvée comes exclusively from Premier Cru vineyards around Sermiers in Champagne, an area known for its chalk and limestone-rich soils that give Blanc de Blancs its tension and mineral backbone. Grapes are typically harvested by hand to ensure optimal ripeness and careful selection in the vineyard. In the cellar, the wine is produced using the traditional method (méthode champenoise), with gentle pressing of whole clusters, controlled fermentation in stainless steel or neutral vessels, and an extended period of aging on the lees in bottle to build texture and complexity before disgorgement and dosage. The result is a precise, terroir-driven Champagne that showcases the purity of Sermiers Chardonnay.

This Champagne is a natural partner for refined, delicate dishes. Pair it with fresh oysters, caviar, scallops, sushi and sashimi, or simply a plate of fine seafood and shellfish. It also works beautifully with goat cheese, light fish carpaccio, tempura, or a simple tart of lemon and fresh herbs. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness and precision.
