This 2017 vintage stands out for its refinement and balance, offering both immediate pleasure and the promise of graceful evolution in the cellar.

Tasting Notes
In the glass, the wine shows a deep, shimmering ruby hue with garnet highlights at the rim, reflecting both concentration and finesse. The nose is layered and precise: wild red berries, black cherries and cranberries are underpinned by notes of rose petal, dried violets, subtle forest floor, and a touch of sweet spice and fine oak. On the palate, this Clos Vougeot is detailed and poised rather than heavy, with a core of vibrant red and dark fruit framed by silky yet firmly structured tannins. Flavors of ripe cherry, raspberry and redcurrant mingle with hints of black tea, cedar, truffle and a mineral backbone that speaks clearly of its Grand Cru origin. Sourced from the historic Clos Vougeot Grand Cru, this wine reflects a patchwork of limestone-rich, clay-limestone and more gravelly soils that give both depth and tension to the Pinot Noir. Francois de Nicolay is known for his commitment to organic and often biodynamic principles, favoring careful vineyard work and moderate yields to ensure concentration and purity of fruit. Harvesting is typically done by hand, with strict sorting to retain only perfectly ripe, healthy bunches. In the cellar, the winemaking is minimalist: gentle extraction, a thoughtful use of whole clusters depending on the vintage, and fermentation with indigenous yeasts. Élevage takes place in French oak barrels (with a restrained proportion of new oak) to polish the tannins and add subtle complexity without overshadowing the character of Clos Vougeot.

Food & Serving
This is a classic partner for refined cuisine: think roast duck with cherries, veal loin with morels, guinea fowl, or simply a rack of lamb with herbs. It also shines alongside mushroom-based dishes, truffle risotto, or aged hard cheeses like Comté or Gruyère. For optimal enjoyment, serve at 15–16°C (59–61°F). Decanting for 45–60 minutes in its youth helps the bouquet open and the structure soften; as the wine ages, a shorter, more gentle decant just to remove sediment will be sufficient.
