Tasting Notes
In the glass, this Blanc de Blancs shows a luminous pale gold hue with a fine, persistent mousse that hints at its meticulous craftsmanship. The nose is delicate yet complex, opening with notes of lemon zest, green apple and white flowers, followed by nuances of chalk, fresh brioche and a touch of almond.
On the palate, it is crisp, vibrant and focused, with a tensile acidity that frames flavors of citrus, pear, and white stone fruit. Franck Bonville is based in Avize in the heart of the Côte des Blancs, where pure chalk subsoils and cool, sunny slopes produce some of Champagne’s most prized Chardonnay. The fruit for this Grand Cru Blanc de Blancs Brut is sourced exclusively from Grand Cru vineyards, primarily around Avize and neighboring top villages, giving the wine its hallmark finesse and minerality. Grapes are hand-harvested at optimal ripeness to preserve natural acidity and aromatic clarity. Vinification typically takes place in temperature-controlled stainless steel to highlight purity of fruit, followed by extended aging on the lees in bottle, which builds texture, fine bubbles and subtle bakery notes before disgorgement and a carefully judged Brut-level dosage.

This refined Champagne is a natural partner for oysters, scallop carpaccio, sashimi, and other delicate seafood dishes that echo its saline, citrus-driven profile.
