Foss Marai Valdobbiadene Superiore di Cartizze Dry is a refined sparkling Prosecco that showcases one of the most prized crus in all of Valdobbiadene: the steep hills of Cartizze in Santo Stefano. Crafted exclusively from Glera grapes, it balances luxurious ripeness with an elegant, finely textured sparkle. Cartizze has long been considered the “grand cru” of Prosecco, and this wine captures that historic prestige in a polished, contemporary style.
Tasting Notes
In the glass, this Cartizze Prosecco shows a pale straw-yellow colour with bright, silvery highlights and a persistent, fine mousse. The bubbles are delicate yet continuous, creating a graceful crown at the rim.
The nose is immediately inviting, with aromas of ripe pear, golden apple, white peach and acacia blossom, layered with hints of citrus zest, fresh pastry and a subtle touch of almond. On the palate, the “Dry” style (which in Prosecco terms means a softer, slightly sweeter profile) offers silky, creamy bubbles and flavours of orchard fruits, candied citrus, white flowers and a whisper of honey. The sweetness is beautifully balanced by fresh acidity, keeping the wine lively and precise rather than heavy. This is a Prosecco meant to be enjoyed in its youth, ideally within 2–3 years of release, when its fruit, fragrance and finesse are at their brightest.
Production
The Glera grapes for this wine come from the historic Cartizze hill in Santo Stefano, a small, steeply terraced area with well-drained soils and optimal sun exposure—conditions that produce particularly concentrated, aromatic fruit. Foss Marai purchases the grapes directly from growers, maintaining close relationships to ensure meticulous vineyard care and hand-harvesting at optimal ripeness. In the cellar, the must is gently pressed and fermented at controlled temperatures to preserve delicate aromas. The secondary fermentation takes place using the Charmat (Martinotti) method in pressurised tanks, allowing Foss Marai to apply modern technology while staying true to regional tradition, resulting in a sparkling wine of purity, precision and finesse.
Food & Serving
This Cartizze Dry is a superb partner for refined appetizers and lightly sweet or creamy dishes: think prosciutto and melon, delicate shellfish, sushi, mild cheeses, foie gras, or fruit-based tarts and pastries. Its gentle sweetness also makes it ideal with panettone, almond cakes and other festive desserts. Serve well-chilled at around 6–8°C (43–46°F). Decanting is not necessary; simply open and pour, allowing a minute or two in the glass for the aromas to unfold.
