Production
Surfiner Cuvée Brut is crafted in the Veneto region, drawing on vineyards influenced by a mild climate, good sun exposure, and well-draining, often hillside soils that favor aromatic grapes. The Glera, Chardonnay, and Sauvignon Blanc are typically harvested in the cool hours to preserve freshness and aroma definition. After gentle pressing, the base wines are fermented at controlled low temperatures in stainless steel to lock in primary fruit. The cuvée is then assembled and undergoes secondary fermentation in pressurized tanks (Charmat/Martinotti method), a classic approach in the region that enhances the wine’s vibrant aromatics and produces a fine, lively perlage before bottling under pressure.
