Les Forts de Latour 2007 is the acclaimed second wine of the legendary Château Latour in Pauillac, Bordeaux, offering a refined and approachable expression of one of the Médoc’s greatest terroirs. From a cooler, earlier-drinking vintage, this wine is now beautifully mature, showing classic Left Bank character with poise and subtlety. It delivers much of the pedigree and structure of grand vin Pauillac, but in a more accessible and ready-to-enjoy style.

Tasting Notes
In the glass, Forts de Latour 2007 shows a deep garnet core with a brick-tinged rim, reflecting its gentle evolution in bottle. The bouquet is fully open and inviting, with aromas of blackcurrant, black cherry and plum layered over notes of melted tar, graphite, cedar and cigar tobacco, along with a subtle hint of dried herbs and spice. On the palate, this is a medium-bodied, classically structured Pauillac with grainy, well-integrated tannins and a savory, gently chewy texture. Flavors of dark berries, cassis and black plum mingle with white pepper, graphite, tobacco leaf and a touch of leather, leading into a precise, dry, tobacco-tinged finish. The wine is at or very near its peak now, offering optimum complexity and harmony, though it still has the depth to hold and drink well for several more years under good cellar conditions.

Production
Les Forts de Latour is sourced from selected parcels within the famed Château Latour estate in Pauillac, on Bordeaux’s Left Bank. The vineyards sit on deep gravel soils over a clay and limestone subsoil, providing excellent drainage and encouraging deep root systems that contribute to concentration and complexity. The 2007 blend is Cabernet Sauvignon-led, complemented by Merlot and small amounts of Cabernet Franc and Petit Verdot, harvested by hand with rigorous selection in the vineyard and at the sorting table. Vinification follows the meticulous standards of Château Latour: fermentation in temperature-controlled vats, followed by aging in French oak barrels (a significant proportion new) to refine tannins and integrate oak, while preserving the wine’s pure, graphite-tinged Pauillac character.

Food & Serving
This mature Pauillac pairs beautifully with classic dishes such as roast lamb with rosemary, dry-aged ribeye, duck breast, beef Wellington, or game birds like pheasant. It also works well with mushroom-based dishes, truffle risotto, and aged hard cheeses such as Comté or mature Cheddar. Serve at 16–18°C (60–64°F); if the bottle has been well-cellared, a gentle decant of about 30 minutes can help it open up, but prolonged decanting is not necessary at this stage of its evolution.

Situated at the southern end of Pauillac, adjacent to the Saint-Julien border, the estate’s vineyards occupy some of the most prized gravel ridges in the Médoc, facing the Gironde estuary. Les Forts de Latour, introduced in the 1960s, has since become one of Bordeaux’s benchmark second wines, often rivaling classified growths in quality. It reflects the same meticulous viticulture, low yields and rigorous selection that define Château Latour, offering enthusiasts a more approachable yet still deeply authentic expression of this iconic Pauillac estate.
