Foradori Fontanasanta Nosiola 2024 is a captivating expression of one of Trentino’s oldest and rarest white grape varieties, crafted with patience and respect for tradition. This is not a conventional white wine, but a quietly powerful, textural interpretation of Nosiola, made with extended skin contact in clay amphorae. It combines Alpine purity with a gentle amber hue and a deep sense of place, offering a wine that is both soulful and remarkably ageworthy.
Tasting Notes
In the glass, Fontanasanta Nosiola typically shows a pale to medium golden or delicately amber colour, a visual hint of its time spent on the skins. The nose is subtle yet complex, with notes of dried alpine herbs, chamomile, acacia blossom and mountain flowers layered over citrus zest, quince, green and yellow apple, and a faint nutty tone reminiscent of hazelnut or walnut. With air, more savoury nuances emerge: hints of hay, crushed stones, and delicate spice.
On the palate, the wine is taut and refined rather than loud, with a gentle grip from the skin contact that frames the fruit rather than overpowering it. Expect flavours of citrus peel, pear, orchard fruits and softly dried herbs, intertwined with a saline, mineral backbone that speaks of its mountainous origin. The texture is silky but structured, with a fine phenolic bite and a long, quietly persistent finish. Thanks to its natural concentration, skin contact and careful élevage, Fontanasanta Nosiola has excellent aging potential: over 5–10 years from vintage it typically gains complexity, with more pronounced nutty, honeyed and herbal notes while retaining freshness and tension.
Production
The Nosiola grapes for Fontanasanta come from hillside vineyards above Trento, within the historic heartland of the variety and close to the Valle dei Laghi. Here, poor, well-drained soils and significant diurnal temperature shifts help the grape ripen slowly while preserving acidity and aromatic delicacy. Farming is fully biodynamic, encouraging living soils and healthy, deeply rooted vines capable of expressing their terroir with clarity. Grapes are harvested by hand at optimal ripeness, then fermented on their skins in clay amphorae (tinajas from Villarrobledo, Spain). The natural porosity and shape of the amphorae allow for gentle micro-oxygenation and an extended maceration on the skins without harsh extraction, resulting in a wine with fine tannic structure, energy and nuance. Fermentation and maturation proceed with minimal intervention, allowing Nosiola’s character and the site’s minerality to take center stage.
Food & Serving
Fontanasanta Nosiola is a highly versatile gastronomic wine that thrives alongside subtly aromatic, textural dishes. It pairs beautifully with freshwater fish, trout or char, simple preparations of shellfish, and herb-led vegetable dishes such as artichokes, asparagus, fennel, and wild mushrooms. It is also outstanding with alpine cheeses, aged mountain tomme, soft rinded cheeses, and delicately spiced poultry or rabbit. Serve at 10–12°C to reveal its full aromatic range and textural detail. A short decant of 20–30 minutes is recommended, especially in its youth, to let the wine open up and to soften the initial grip from the skin contact.
