Fleury Champagne Rosé de Saignée Extra Brut is a characterful, dry rosé Champagne crafted from Pinot Noir using the traditional saignée method more commonly associated with fine red wines. This non-vintage cuvée is all about purity of fruit and vinosity, with a deliberately low dosage that lets the terroir and grape speak clearly. It’s a serious yet highly drinkable rosé Champagne, ideal for those who prefer finesse and precision over sweetness.
Tasting Notes
In the glass, this rosé Champagne shows a vibrant, deep salmon to light ruby hue with fine, persistent bubbles and a delicate mousse. The nose is expressive and seductive, offering aromas of wild strawberries, redcurrants, raspberry coulis and pomegranate, layered with hints of rose petals, blood orange, subtle spice and a touch of chalky minerality.
On the palate, it is dry and taut (Extra Brut), with vivid red berry fruit, cranberry and citrus zest wrapped in a lively, mouthwatering acidity. There is a gentle tannic grip—typical of the saignée method—that gives structure and a subtle, vinous feel, without ever becoming heavy. The finish is long, clean and mineral, with lingering notes of red berries and citrus peel. While designed to be thoroughly enjoyable on release, this cuvée can comfortably develop for several years in the cellar, gaining complexity and softer texture over 3–5 years.
Production
This Champagne is crafted in the southern part of the Champagne region, where Pinot Noir thrives on chalk, limestone and clay-limestone soils, lending both ripeness and a distinct mineral backbone. The Rosé de Saignée style is achieved by allowing a short maceration of the Pinot Noir grapes—just enough skin contact to extract colour, aromatics and a touch of structure—before the lightly tinted juice is drawn off. Grapes are typically harvested by hand to ensure careful selection and integrity of the fruit. Following gentle pressing and fermentation, the wine undergoes its secondary fermentation in bottle in the traditional Champagne method, where it rests on its lees to develop texture and complexity. The dosage is kept very low (Extra Brut), resulting in a Champagne that emphasizes purity, freshness and the natural character of Pinot Noir.
Food & Serving
This Rosé de Saignée Extra Brut is an excellent partner for food, pairing beautifully with tuna tartare, sushi and sashimi, charcuterie, grilled salmon, duck breast with berries, or even roast chicken with herbs. It also works well with Mediterranean dishes, lightly spiced Asian cuisine and aged hard cheeses. Serve well-chilled but not too cold, ideally around 8–10°C (46–50°F), to allow the aromas and texture to fully express themselves. A brief, gentle aeration in the glass or a short decant of 10–15 minutes can help open up the wine’s red-fruited and floral nuances.
