Fernand Thill Champagne Grand Cru Blanc de Blancs Brut is an elegant expression of pure Chardonnay from some of Champagne’s most prized vineyards. Crafted exclusively from Grand Cru sites and blended across vintages, it offers both precision and depth in the glass. This Non-Vintage cuvée captures the classic Blanc de Blancs profile—fine, chalk-driven and refined—while showcasing the timeless charm of grower-made Champagne.

Tasting Notes
In the glass, this Champagne shows a bright, pale gold hue with delicate, persistent bubbles forming a fine mousse. The nose is refined and focused, opening with notes of green apple, lemon zest and pear, layered with hints of white flowers, chalk, fresh brioche and a subtle almond note. On the palate, the wine is precise and lively, with a crisp, linear acidity that frames flavors of citrus, juicy orchard fruits and a touch of stone fruit. A pronounced mineral backbone—typical of Chardonnay from Grand Cru chalk soils—runs through the mid-palate, complemented by nuances of toasted hazelnut and pastry from extended lees contact. The finish is long, dry and mouthwatering, leaving a lingering impression of citrus peel and saline minerality. Enjoy it now for its tension and freshness, or cellar for 3–6 years to gain a bit more creaminess and complexity.

Production
Sourced entirely from Grand Cru Chardonnay vineyards in the heart of the Champagne region, this Blanc de Blancs reflects the influence of cool climate and chalk-rich soils that enhance finesse and minerality. Grapes are harvested by hand at optimal ripeness to preserve acidity and purity of fruit. The must is gently pressed, and fermentation typically takes place in temperature-controlled vessels to maintain freshness, followed by malolactic fermentation as desired to balance tension and texture. The base wines from different parcels and vintages are then carefully blended to achieve a consistent house style before undergoing secondary fermentation in bottle and extended aging on the lees, which adds creaminess, complexity and the fine, persistent mousse.

This Grand Cru Blanc de Blancs is a versatile and sophisticated partner at the table. It shines alongside oysters, scallops, sashimi, and other delicate seafood, as well as goat cheese, hard cheeses like Comté, and light poultry dishes or vegetable terrines. Serve well-chilled at around 8–10°C (46–50°F) to highlight its precision and minerality. A brief 10–15 minute rest in the glass—or a very short decant in a chilled carafe—can help the aromas fully open while maintaining the wine’s vibrant edge.
