Tasting Notes
In the glass, this Franciacorta Brut shows a bright, pale straw-yellow hue with a fine, persistent perlage that forms a delicate, continuous bead. The nose is refined and inviting, opening with notes of citrus blossom, crisp green apple and pear, followed by hints of white flowers, fresh brioche, almond and a subtle mineral lift.
On the palate, it is dry, vibrant and beautifully balanced, with lively acidity framing flavors of lemon zest, Golden Delicious apple and stone fruit. Gentle autolytic notes of toasted bread, pastry cream and hazelnut round out the mid-palate, leading to a clean, lingering finish with a chalky, saline edge typical of quality Franciacorta. In magnum, this cuvée can evolve gracefully over 5–7 years from purchase, gaining more complexity, creaminess and nutty nuances while retaining its core freshness.
Production
Ferghettina sources grapes from estate vineyards in the rolling hills of Franciacorta in Lombardy, where a cool climate and glacial moraine soils rich in minerals provide ideal conditions for premium sparkling wine. The Brut is typically based on Chardonnay with a portion of Pinot Noir, harvested by hand to ensure careful selection of perfectly ripe, healthy bunches. After a gentle pressing, the base wines are fermented in temperature-controlled stainless steel to preserve purity of fruit. The final blend undergoes secondary fermentation in bottle following the traditional method, with an extended period of aging on the lees (often around 24 months or more) to build texture, complexity and that fine, creamy mousse. Disgorgement and a carefully judged Brut dosage complete the cuvée, maintaining a crisp and elegant style.
Food & Serving
This Franciacorta Brut Magnum is an excellent choice as an aperitif, but has the structure to shine throughout a meal. It pairs beautifully with oysters, shellfish, sushi and delicate fish dishes, as well as light risottos, fresh goat cheese, poultry terrines and fine charcuterie. Serve well-chilled at around 6–8°C (43–46°F) to highlight its freshness and vibrant aromatics. In magnum, a brief opening in the glass is usually sufficient, but for more complexity, you may lightly aerate by pouring the first small glasses and allowing the bottle to rest on ice for 10–15 minutes before continuing to serve.
