The nose is generous and layered, opening with ripe blackberry and blackcurrant, followed by perfumed rose petal, dried apricot, sweet baking spices and a touch of vanilla and cinnamon from its time in barrel. Subtle hints of graphite, tobacco leaf and Mediterranean herbs add complexity as the wine evolves in the glass. On the palate, this vintage is plush and explosive, delivering concentrated dark fruit wrapped in fine, mouth-coating tannins. Juicy blackberries and black cherries are lifted by notes of spice, cocoa and a touch of dried orange peel, giving a sense of both richness and vertical energy. Production
Saffredi is crafted from vineyards in the Maremma area of southern Tuscany, where warm coastal influences, well-drained soils and intense sunlight help Cabernet Sauvignon, Merlot and Petit Verdot achieve full phenolic ripeness while retaining freshness. Grapes are carefully harvested by hand at optimal maturity and sorted to ensure only perfectly healthy, concentrated berries make it into the final blend. Fermentation takes place in temperature-controlled vessels to preserve aromatics and extract fine, ripe tannins rather than harsh bitterness. The wine is then aged in French oak barriques, with the 2020 vintage seeing slightly reduced oak influence compared to previous years, a deliberate choice by Elisabetta Geppetti and her team to let the purity of the dark fruit and the character of the terroir come to the forefront.

Food & Serving
This is a superb food wine that excels alongside richly flavoured dishes: think Tuscan bistecca alla fiorentina, grilled lamb chops with rosemary, slow-braised beef, game birds, or aged hard cheeses such as Pecorino Toscano and Parmigiano Reggiano. It also pairs beautifully with truffle dishes, mushroom ragù or roasted root vegetables with herbs. Serve at 16–18°C (60–64°F) to highlight both its fruit and its structure.
