Fattoria Le Pupille, Maremma Saffredi 2017

Fattoria Le Pupille’s Saffredi is one of the defining wines of modern Maremma, created by a true pioneer of southern Tuscany. First released in 1987, it helped put the region on the map with its exceptional quality, elegance, and international reputation.

Tasting Notes
Saffredi 2017 shows a deep, inviting color and a refined aromatic profile of red fruit, ripe berries, blackberry, and warm spice. Notes of clove, cinnamon, and chocolate add depth and complexity, while the bouquet remains polished and expressive. On the palate, the wine is rounded, velvety, and beautifully balanced, with supple tannins and a long, lingering finish. Its spice-driven aftertaste and layered structure suggest very good aging potential, allowing the wine to develop even more nuance over time.

Production
The grapes come from the Saffredi vineyard in Pereta, located at around 250 meters above sea level with southwest exposure for the older vines and southeast exposure for newer plantings. Vine density averages about 4,000 vines per hectare, and harvest is carried out at different times depending on variety, with Merlot picked in mid-September, Cabernet Sauvignon at the end of September into early October, and Petit Verdot in mid-October. Fermentation takes place in stainless steel at 26–28°C, followed by 15–20 days of skin maceration and 18 months of maturation in 75% new French oak.

Food & Serving
This is a superb match for red meat, game, and other richly flavored dishes, where its structure and spice can shine. It also pairs beautifully with dark chocolate. Serve at around 16–18°C, and decanting for 1–2 hours is recommended to let the wine fully open up.
