Falmet Nathalie Champagne Brut Nature is a laser-precise, characterful grower Champagne crafted from 100% Pinot Noir (Pinot Nero) in the southern reaches of France’s Champagne region. Made with zero dosage, it delivers an unadorned expression of its terroir, relying solely on the quality of the fruit and the skill of the winemaker rather than added sweetness. As one of the pioneering female grower-producers in Champagne, Nathalie Falmet has earned a devoted following for her pure, terroir-driven style and hands-on approach from vineyard to bottle.

Tasting Notes
In the glass, this Brut Nature shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate mousse. The nose is refined and focused, with aromas of crisp green apple, pear skin, lemon zest and white flowers layered over hints of chalk, toasted bread, and a gentle nutty nuance from extended lees contact. On the palate, the wine is bone-dry yet far from austere: vibrant citrus and orchard fruit are carried by a racy, linear acidity and a distinct mineral backbone. You may notice notes of grapefruit pith, stone fruit and a touch of brioche, evolving into a long, mouthwatering finish with a subtle saline edge. This non-vintage Champagne is ready to drink now for its energy and precision but has the structure to develop further complexity over the next 3–5 years, gaining more biscuity, honeyed tones with time in bottle.

Production
Sourced from Nathalie Falmet’s own vineyards in the Côte des Bar, in the southern part of Champagne, this cuvée reflects a cooler continental climate combined with limestone-rich soils over clay, ideal for structured, expressive Pinot Noir. Grapes are typically harvested by hand at optimal ripeness to preserve freshness and allow meticulous selection of the healthiest bunches. In the cellar, the must is gently pressed and vinified with a minimalist philosophy—primarily in temperature-controlled stainless steel, sometimes with partial fermentation or élevage in neutral oak to add texture without masking fruit purity. The wine undergoes secondary fermentation in bottle and is aged on its lees to build complexity and finesse. As a Brut Nature, no dosage is added at disgorgement, allowing the natural balance and terroir character to shine through without any sweetness.

Food & Serving
This Champagne Brut Nature is a superb companion to pristine, delicate dishes where freshness is key: think oysters on the half shell, sashimi, ceviche, or lightly grilled prawns. It also pairs beautifully with sushi, tartares, goat cheese, and simple dishes featuring seasonal vegetables or white poultry. Serve well-chilled at around 8–10°C (46–50°F) to highlight its tension and aromatics. A brief 10–15 minutes in the glass (or a very short decant into a small carafe) can help the wine open up, softening the initial edge and revealing more depth and complexity.

Nathalie Falmet is both a trained oenologist and hands-on vigneronne, a relatively rare combination in Champagne and one that has placed her firmly among the region’s most respected grower-producers. Working from her base in the Côte des Bar, she took over her family’s vineyards and has been instrumental in raising the profile of this once-underestimated subregion, showcasing its potential for characterful, Pinot Noir–driven Champagnes. Known for her technical expertise and thoughtful, low-intervention approach, Falmet focuses on small-batch, terroir-expressive wines rather than large-scale production. Her Champagnes are frequently praised by sommeliers and enthusiasts alike for their precision, authenticity and distinctive sense of place.
