Falmet Champagne Brut is a characterful non-vintage Champagne crafted by Nathalie Falmet from her own vines in the southern Côte des Bar. Dominated by Pinot Noir (80%) with the balance Chardonnay, this cuvée marries power with precision, offering a pure expression of its limestone-rich terroir. Tasting Notes
In the glass, Falmet Champagne Brut shows a bright, pale gold hue with a fine, persistent bead that speaks to careful aging on the lees. The nose is inviting and layered, opening with ripe orchard fruits—think yellow apple and pear—alongside notes of white flowers, citrus zest, and a subtle brioche or freshly baked bread character.
On the palate, the Pinot Noir leads with structure, energy, and a sense of vinous depth, while the Chardonnay brings lift and finesse. Expect flavors of crisp apple, stone fruit, lemon curd, and a touch of red-fruited nuance from the high Pinot content, all wrapped in a fresh, chalky minerality. The mousse is creamy but vibrant, and the finish is long, dry, and focused, with a clean saline edge. Production
The grapes for this Brut NV come from Nathalie Falmet’s own vineyards in the Côte des Bar, the southernmost part of Champagne where Kimmeridgian and limestone-clay soils lend both power and tension to the wines. Pinot Noir (around 80%) forms the backbone of the blend, with the remainder Chardonnay providing brightness and aromatic lift. Harvesting is typically done by hand, parcel by parcel, to ensure only healthy, optimally ripe clusters are selected. In the cellar, the musts are gently pressed, and fermentation takes place in temperature-controlled vessels to preserve freshness and fruit definition. Base wines from different parcels and, where appropriate, different years are blended to achieve balance and house style, before the second fermentation in bottle and an extended period of aging on the lees. The wine is then disgorged and finished with a carefully judged dosage to create a Brut Champagne that combines vigor, purity, and regional character.
Food & Serving
Falmet Champagne Brut is highly versatile at the table, making it as suitable for an aperitif as it is for a full meal. Try it with oysters, scallop carpaccio, or sushi to highlight its mineral backbone, or pair with roast chicken, poultry terrines, charcuterie, and soft cheeses such as Brie or Chaource to draw out its Pinot-driven depth. It also works beautifully alongside lightly creamy pasta dishes and simple grilled fish. Serve well chilled at around 8–10°C (46–50°F) in a tulip-shaped Champagne glass to concentrate the aromas. A brief 10–15 minutes in the glass is enough for the wine to open up; decanting is generally not necessary, but allowing it to warm slightly from fridge temperature will reveal more nuance.
