This cuvée draws its distinctive character from Kimmeridgian soils, which lend a signature finesse and minerality to the wine. Blending multiple harvests and terroirs from across the Champagne region, Brut Tradition captures the house style in a consistently elegant, expressive bottling.

Tasting Notes
In the glass, Erick Schreiber Brut Tradition shows a luminous, pale gold hue with delicate, persistent bubbles that form a fine and lively mousse. The nose is expressive yet precise, offering notes of crisp red apple, pear, and white peach layered with hints of brioche, almond, and subtle red berry undertones that reflect its Pinot Noir origins. On the palate, this Champagne is dry (Brut) and finely structured, with a fresh, linear acidity that balances the wine’s fruit depth and gentle creaminess. Flavors of orchard fruit, citrus zest, and a touch of wild strawberry unfold over a chalk-tinged mineral backbone, followed by a clean, elegant finish with lingering notes of pastry and spice. Enjoyable now for its vibrancy and precision, it also has the potential to develop additional complexity over the next few years of careful cellaring.

Production
Brut Tradition is born from vineyards rooted in Kimmeridgian soils—limestone-rich and fossil-laden—known for imparting tension, salinity, and finesse to Pinot Noir in the Champagne region. Grapes are harvested at optimal ripeness to preserve freshness and balance, then gently pressed to obtain pure, clear juice. The wine is vinified as a Blanc de Noirs, with careful separation from the skins to maintain its pale color, and is crafted as a subtle blend of several vintages and terroirs. After the primary fermentation, the base wines are assembled and undergo secondary fermentation in bottle, followed by extended aging on the lees to build texture, fine bubbles, and complexity before disgorgement and dosage at Brut level.

Food & Serving
This Champagne is a versatile partner at the table, pairing beautifully with oysters, shellfish, sashimi, and delicate white fish dishes, as well as poultry, light charcuterie, and soft-ripened cheeses like Brie or Camembert. Its freshness and structure also make it an excellent aperitif Champagne. Serve well-chilled at around 8–10°C (46–50°F) to highlight its precision and minerality. A brief 10–15 minutes in the glass is usually enough to allow the aromas to open; decanting is not necessary, though pouring into a tulip-shaped Champagne glass will enhance its aromatic complexity.
