Elém Special Edition Alta Langa Metodo Classico Rosé Pas Dosé 2017 is a refined sparkling wine from the hills of Piemonte, crafted entirely from Pinot Nero. This rosé embodies the crisp, linear style of Alta Langa, where altitude and cool nights preserve vibrant acidity and delicate aromas. Made in a bone-dry “pas dosé” style, it speaks with absolute clarity of grape, place, and meticulous winemaking.
Tasting Notes
In the glass, this Alta Langa Rosé shows a pale, shimmering salmon-pink hue with a fine, persistent mousse. The bubbles are delicate and continuous, giving the wine an elegant visual texture.
On the nose, it offers precise, fresh aromas of wild strawberries, redcurrants, pomegranate, and blood orange zest, layered with hints of rose petal, white pepper, and subtle brioche from time spent on the lees. The palate is taut and vibrant, driven by the naturally high acidity of Pinot Nero harvested at low alcoholic ripeness. Flavors of crunchy red berries, citrus, and a touch of cranberry are wrapped in a chalky, mineral backbone and a very dry, saline finish. With its structure and freshness, this 2017 has the potential to evolve gracefully for several more years, gaining complexity, savory depth, and more pronounced autolytic notes while retaining its core of tension and energy.
Production
Sourced from high-altitude vineyards in Piemonte’s Alta Langa area, this 100% Pinot Nero is grown on poor, well-drained soils that favor low yields and high natural acidity. The grapes are harvested relatively early, at a low alcoholic maturity but with elevated potential acidity, to safeguard freshness and the grape’s primary aromas over time. After gentle pressing, the base wine is vinified with a focus on purity and precision, then undergoes a second fermentation in the bottle following the Metodo Classico. Extended lees aging builds texture and subtle complexity. As a true Pas Dosé, the wine is topped up exclusively with the same wine after disgorgement, with no sugar or external additives, preserving the original character of the cuvée in its purest, most uncompromised form.
Food & Serving
This Alta Langa Rosé Pas Dosé is a natural fit for refined starters and seafood: think oysters, sashimi, tuna tartare, carpaccio, and delicate shellfish, as well as charcuterie, vitello tonnato, and soft-rind cheeses. Its crisp structure and dry finish also partner beautifully with light pasta dishes, smoked salmon, and vegetable tempura. Serve well-chilled at 8–10°C (46–50°F) to highlight its tension and aromatic precision. A brief 10–15 minutes in the glass or a short, gentle aeration is sufficient; extended decanting is not necessary but pouring into larger tulip-shaped flutes or white wine glasses will allow the wine’s complexity to unfold.
