The vines draw deeply into these stony soils, concentrating flavor while preserving freshness, particularly in a vintage like 2019, marked by a long, even growing season and slow, steady ripening. Grapes are harvested by hand in small lots at optimal ripeness, with meticulous sorting in the vineyard and at the winery to ensure only pristine fruit is used.
