Tasting Notes
In the glass, the 2018 Eisele Vineyard Cabernet Sauvignon shows a very deep, opaque purple-black hue, hinting at its concentration and youth. The nose unfolds slowly with aeration, revealing an intense, layered bouquet of dark chocolate, warm blackcurrant, baked plum and Morello cherry, interwoven with notes of red rose petals, violets, pencil shavings, cinnamon stick, dusty earth and a subtle ferrous/mineral undertone.
On the palate, this is full-bodied yet poised, with an almost electric core of black and red fruits that feel both ripe and vividly fresh. Superfine, grainy tannins frame the fruit with remarkable precision, creating a structure that is powerful but never heavy. The acidity is bright and energetic, driving a very long, perfumed finish that echoes with dark berries, florals and spice. In Double Magnum, this wine is built for the long term; properly stored, it should evolve beautifully for 20–30+ years, gaining further complexity, softness and aromatic nuance.
Production
Sourced exclusively from the historic Eisele Vineyard in Calistoga, at the northern end of Napa Valley, this Cabernet Sauvignon benefits from gravelly, well-drained alluvial soils that naturally limit yields and concentrate flavor. The site’s warm days, tempered by cool evenings and gentle breezes, allow Cabernet to ripen slowly and evenly, preserving freshness and aromatic detail. Grapes are meticulously hand-harvested in small lots at optimal ripeness, then sorted berry by berry to ensure only pristine fruit makes it into the fermenters. Vinification is conducted with a focus on precision and restraint: gentle extraction, temperature-controlled fermentation, and careful management of pump-overs to capture purity, texture and finesse rather than sheer power. The wine is aged in high-quality French oak barrels (a significant portion new), where it matures on fine lees, integrating tannins and developing its signature complexity before being bottled in large-format Double Magnums to enhance longevity and graceful aging.
Food & Serving
This 2018 Eisele Vineyard Cabernet Sauvignon is superb alongside refined, richly flavored dishes such as dry-aged ribeye, roast lamb with rosemary and garlic, slow-braised short ribs, or venison with a dark berry reduction. It also complements truffle-infused dishes, wild mushrooms, and aged hard cheeses like Comté, Parmigiano Reggiano or well-matured cheddar. Serve at 16–18°C (60–65°F) to best showcase its aromatic complexity and structure. Decanting is strongly recommended: for this young vintage in Double Magnum, allow at least 2–3 hours in a large decanter, and up to 4–5 hours for maximum expression at special dinners or tastings.
