Tasting Notes
In the glass, Versante Est 2020 is pale straw with greenish highlights, bright and crystalline, hinting at its freshness and youth. The nose opens with citrus zest—lemon, lime, and pink grapefruit—wrapped around notes of wild fennel, crushed rock, and salty sea breeze, with subtle suggestions of white flowers, green apple, and a touch of raw almond.
On the palate, the wine is taut, linear, and saline, with a spine of mouthwatering acidity that is classic Carricante. Flavors echo the nose: citrus and green orchard fruits layered over smoky minerality, hints of bitter lemon, anise, and a gentle herbal edge. The finish is long, precise, and stony, leaving a lingering impression of sea salt and citrus peel. While already highly enjoyable now, this vintage has the structure to evolve gracefully for 5–8 years, gaining more textural depth, honeyed nuances, and complexity with time in bottle.
Production
Versante Est 2020 is sourced from high-altitude vineyards on Etna’s eastern slope, where vines grow on decomposed volcanic ash and basalt, interspersed with sandy, well-drained soils. This terroir, combined with cooler temperatures and strong diurnal shifts, yields grapes with intense acidity, minerality, and aromatic detail. Eduardo Acosta Torres works with carefully tended vineyards, often with older vines, harvested by hand to ensure meticulous fruit selection. In the cellar, he favors a minimally interventionist approach: gentle pressing, native yeasts for spontaneous fermentation, and élevage in neutral vessels (such as concrete or older large barrels) to preserve purity of fruit and terroir expression. The result is an unadorned, authentic Etna Bianco style that highlights texture and minerality rather than oak.
Food & Serving
This Carricante shines alongside seafood and dishes that echo its maritime, mineral profile. Think crudo, oysters, grilled prawns, simply prepared white fish, octopus, and shellfish risotto, as well as vegetable-focused dishes like asparagus, artichokes, fennel salads, and goat cheese or ricotta-based plates. It also pairs beautifully with lightly seasoned poultry and sushi. Serve well-chilled but not icy, around 9–11°C (48–52°F), to allow the aromatics and texture to unfold. A brief splash in a carafe or 15–20 minutes in the glass helps the wine open up, but extended decanting is not necessary.

After training and working with top estates in Sicily, he began bottling his own wines, focusing on small, high-altitude parcels across Etna’s various contrade. His philosophy is rooted in respect for place: organic-minded vineyard work, manual labor on steep, terraced slopes, and low-intervention winemaking that lets the vineyards speak. In a relatively short time, Eduardo has gained a cult following among sommeliers and collectors for his precise, soulful expressions of Etna, contributing meaningfully to the region’s reputation as one of Italy’s most dynamic and terroir-driven wine landscapes.
