Edi Keber Collio Merlot 2021

Edi Keber’s Collio Merlot is a refined expression of one of Friuli-Venezia Giulia’s most distinctive terroirs. Made from 100% Merlot in the Collio DOC, it combines ripe fruit, striking minerality, and the elegant structure that has made the region famous for characterful reds.

Tasting Notes
In the glass, this is a deep, lively red with the polish and clarity that Collio wines often show. The nose is fruit-driven and inviting, with pronounced raspberry notes layered over subtle earthy and mineral nuances. On the palate, it is intense, nuanced, and distinctly mineral, with fresh red fruit, fine balance, and a silky texture. The wine reflects the stony, expressive character of its origin, and while it already offers plenty of appeal now, it should also reward a few more years in bottle.

Production
The grapes come from vineyards in Cormons, in the Collio area of Friuli-Venezia Giulia, where the characteristic Ponka soils, known geologically as Flysch, help keep vine vigor low and yields naturally restrained. This poor, mineral-rich terroir is a key reason for the wine’s concentration and precision. After harvest, the wine is aged for around one year in barrique and then a further year in bottle before release.

Food & Serving
This Merlot pairs beautifully with roasted poultry, veal, mushroom dishes, grilled meats, and aged cheeses. Serve it slightly below room temperature, ideally around 16–18°C, and consider decanting for about 30–60 minutes if drinking young to let the aromatics open fully.

Based in Cormons near the Slovenian border, the estate has earned recognition for crafting wines that speak clearly of Collio’s unique soils and continental climate, with a particular emphasis on purity, balance, and terroir expression.
