Doro Princic’s Collio Ribolla Gialla is a refined white wine that captures the elegance and character of Friuli-Venezia Giulia’s Collio hills. Made from Ribolla Gialla, a grape long associated with this borderland region, it combines freshness, depth, and a distinctly mineral signature.

Tasting Notes
In the glass, it shows a straw-yellow color with greenish reflections. The bouquet is inviting and expressive, with notes of acacia blossom, forest floor, and a delicate touch of oak. On the palate, it is lively and precise, with bright freshness, a clean savory edge, and a long, persistent finish. Its balance and fine structure suggest good development potential in bottle, especially over the medium term, where its aromatic complexity and texture can continue to unfold.

Production
The grapes come from the Pradis hills in the heart of Collio, where marl-rich soils lend the wine its marked minerality and sense of place. The vineyards are farmed with respect for the Cormons area’s microclimate, allowing the fruit to reach ideal ripeness while retaining freshness. Harvesting is done by hand in the cool early morning hours, followed by gentle whole-cluster pressing and fermentation in temperature-controlled tanks. The wine then matures slowly on fine lees for at least eight months, adding texture, complexity, and length.

Food & Serving
This Ribolla Gialla is an excellent match for fish dishes, shellfish, light meats, and a range of cheeses. Serve it well chilled, ideally around 10–12°C, to bring out its freshness and aromatic detail. Decanting is not necessary, though a short aeration in the glass can help the wine open up further.
