Tasting Notes
In the glass, this Champagne shows a luminous pale gold colour with fine, persistent bubbles that form a delicate, creamy mousse. The nose opens with ripe citrus—think lemon curd and candied lime—layered with white flowers, green apple, and subtle notes of brioche, hazelnut, and chalky stone.
On the palate, it is taut yet generous, balancing a vibrant, mouth-watering acidity with the rounded texture that comes from bottle age. Flavours of crisp pear, lemon zest, and white peach are underscored by a pronounced mineral backbone and a gentle saline edge that lingers on the finish. As it unfolds in the glass, hints of toasted almond and pastry emerge, adding complexity without ever weighing it down. The 2014 vintage structure and the Blanc de Blancs style suggest very good aging potential: while already harmonious and open, this Champagne should continue to develop more nuttiness, creaminess, and tertiary depth over the next 5–8 years if well cellared.
Production
This Premier Cru Blanc de Blancs is crafted from Chardonnay grown on chalk-rich soils in the heart of the Champagne region, where the cool climate and mineral subsoils yield grapes of high acidity and striking finesse. The fruit is typically harvested by hand to ensure optimal ripeness and careful selection in the vineyard, preserving only the healthiest bunches. After gentle pressing of whole clusters, the clear juice is fermented at controlled temperatures in stainless-steel tanks (and, in part, neutral vessels where appropriate) to retain precision and purity of fruit. The base wines are then blended and undergo secondary fermentation in bottle following the traditional méthode champenoise, with extended lees aging to build creaminess, complexity, and fine, persistent bubbles. The Brut dosage is kept moderate, allowing the natural chalky minerality and saline finish of the Chardonnay to shine through.
Food & Serving
This Champagne’s taut acidity and subtle saltiness make it an outstanding partner for seafood and delicate dishes. Serve it alongside freshly shucked oysters, scallop ceviche, grilled turbot, poached lobster, sushi and sashimi, or classic dishes like sole meunière. It also pairs beautifully with light fish tartare, caviar, and soft, bloomy-rind cheeses such as Brie or Chaource. For ideal enjoyment, serve well chilled at around 8–10°C (46–50°F). Decanting is not necessary, but opening the bottle 10–15 minutes before serving and pouring into proper tulip-shaped Champagne glasses will allow the aromas and texture to fully open up.
