Description
Dönnhoff Niederhäuser Hermannshöhle Riesling Spätlese 2007 is a benchmark German Riesling from one of the Nahe’s most revered vineyard sites. This is a richly textured yet finely etched Spätlese that marries orchard fruit opulence with razor‑sharp precision and deep, stony minerality. Tasting Notes
In the glass, the 2007 Niederhäuser Hermannshöhle Spätlese shows a bright, luminous lemon-gold hue with hints of green at the rim, already hinting at both youthfulness and concentration. The nose is wonderfully expressive: gardenia and peony bring a floral perfume, wrapped around notes of ripe stone fruit, candied citrus, and resinous alpine herbs. Subtle smoke and wet slate tones underscore its mineral backbone, giving the bouquet both lift and depth.
On the palate, this Spätlese is mouth‑filling and textural, with a palpable extract that feels almost tactile. Vibrant, laser-like acidity drives flavors of white peach, mirabelle plum, and ripe orchard fruit, interwoven with salty, stony nuances and a pronounced mineral grip. The sweetness is beautifully balanced, never heavy, and carried effortlessly by the wine’s tension and energy. Still on a slow evolutionary curve, this 2007 has extraordinary aging potential: well-stored bottles can easily evolve and gain complexity over 20–25+ years, developing layers of honey, dried flowers, and deeper savory mineral notes.
Production
Niederhäuser Hermannshöhle is widely regarded as the crown jewel of the Nahe, a steep, south- to southwest-facing vineyard with weathered grey slate and volcanic porphyry that naturally produces intensely mineral, complex Riesling. Dönnhoff farms these old vines with meticulous, largely hands-on work, including careful green harvesting and strictly selective hand-picking to capture optimal ripeness and perfect botrytis-free berries for Spätlese. The 2007 grapes were harvested at the same time as the fruit for the corresponding Grosses Gewächs, then gently pressed and fermented slowly in a combination of stainless steel and traditional large old oak casks with ambient yeasts. The wine was left on its fine lees to gain depth and texture, bottled only when the balance between fruit, sweetness, acidity, and minerality was perfectly aligned.
Food & Serving
This Spätlese’s interplay of sweetness and vibrant acidity makes it exceptionally versatile at the table. It shines with spicy Asian cuisine (Thai or Vietnamese dishes with chili, ginger, and lime), refined sushi and sashimi, and aromatic dishes featuring lemongrass or coriander. It is also superb with rich pâtés, terrines, foie gras, and soft, creamy cheeses such as Brie or young blue cheeses, as well as delicately spiced pork, veal, or roasted poultry. Serve well-chilled but not icy, around 9–11°C (48–52°F), to allow the aromatics to unfold. Decanting is generally not necessary, but opening the bottle 20–30 minutes before serving and using a quality white wine glass will help reveal its full aromatic detail.
