Sourced from the legendary Hermannshöhle site, this Spätlese captures the ripeness of the warm 2003 vintage while maintaining remarkable finesse and clarity. Celebrated by critics upon release, it remains a reference-point wine that showcases just how sensual and precise Riesling can be.

Tasting Notes
In the glass, this Riesling Spätlese shows a deep lemon-gold hue, reflecting both its age and the concentration of the 2003 vintage. The nose is intensely aromatic, with layers of fresh and dried herbs, sweet baking spices, ripe pear, candied apple, melon, raspberry and redcurrant. Subtle hints of smoke, slate and honeyed citrus peel add further complexity as it opens. On the palate, it is full-bodied for a Spätlese and strikingly sensual, with waves of ripe stone and orchard fruits – pear, baked apple and melon – interwoven with spice, red berry notes and a finely etched mineral backbone. The sweetness is beautifully balanced by lively acidity and a precise, focused core of fruit that keeps the wine lively rather than heavy. At this stage, a 2003 bottle will be in its mature drinking window, with honeyed and tertiary nuances emerging, yet top examples from good cellars can still show impressive freshness and complexity. Drink now, but well-stored bottles can continue to evolve gracefully in the near term, offering more caramelized fruit, dried herb and mineral notes over time.

Production
Niederhäuser Hermannshöhle is widely regarded as the crown jewel of the Nahe, a steep, south- to southwest-facing slope rooted in volcanic porphyry, grey slate and limestone, delivering profound minerality and tension to the wines. Dönnhoff harvests Riesling here by hand, parcel by parcel, to capture optimal ripeness and select only pristine fruit suitable for Spätlese quality. In the cellar, the must is gently pressed and fermented slowly with natural or selected yeasts, often at cool temperatures to preserve aromatic intensity. The wine is then matured in a combination of stainless steel and traditional large German oak casks (Stück or Fuder), allowing it to develop texture and depth while maintaining purity, precision and a clear expression of the Hermannshöhle terroir.

Food & Serving
This Spätlese is a superb partner for dishes that combine richness, aromatics and a touch of spice. Think Thai or Vietnamese cuisine with lemongrass and chili, lightly spicy curries, roast duck with fruit-based sauces, or grilled prawns with ginger and coriander. It also shines with refined pork dishes, soft washed-rind cheeses and blue cheeses, where the wine’s sweetness and acidity cut through salt and fat. Serve lightly chilled at around 9–11°C (48–52°F). Decanting is not strictly necessary, but opening the bottle 30–45 minutes before serving or gently pouring into a carafe can help the mature aromatics unfurl.

Weingut Dönnhoff, led for decades by the legendary Helmut Dönnhoff and now by his son Cornelius, is one of Germany’s most acclaimed Riesling estates and a true standard-bearer for the Nahe region. The family has been growing vines in the area for over 250 years, but it was Helmut’s meticulous work from the late 20th century onward that catapulted the estate to international fame.
