Tasting Notes
In the glass, the 2016 Napanook shows a very deep purple-black hue, signaling both concentration and youth. The nose is lifted and expressive, opening with violets, lavender and a touch of anise, followed by layers of warm blackcurrant, blackberry compote and ripe plum. Subtle notes of truffle, cedar chest, cigar box, dark chocolate, cardamom and a hint of seared beef add complexity as it unfolds in the glass. On the palate, this is medium to full-bodied with a firm yet beautifully ripe tannin structure that feels polished and precise rather than heavy. Dark and blue fruits dominate—cassis, blackberries and black plums—interwoven with earthy, mineral tones and a subtle savory edge. The finish is long, fresh and detailed, with excellent acidity keeping everything in balance. In magnum, the 2016 vintage has excellent aging potential; expect it to evolve gracefully over 15–25 years from vintage, gaining further nuance and tertiary complexity.

Production
The Napanook vineyard, part of Dominus Estate in Napa Valley, benefits from well-drained gravelly and loamy soils, abundant sunshine and cooling afternoon breezes that preserve freshness in the grapes. The 2016 blend is composed of 84% Cabernet Sauvignon, 9% Petit Verdot and 7% Cabernet Franc. Grapes are typically harvested by hand in small lots to ensure optimal ripeness and careful sorting. Fermentation is carried out in temperature-controlled tanks, allowing for gentle extraction of color, flavor and tannin, after which the wine is matured in French oak barrels, around 20% of which are new, to add subtle spice and structure without overshadowing the purity of fruit.

Food & Serving
This structured yet refined red pairs beautifully with rich, savory dishes such as grilled ribeye, roast lamb, venison, or slow-braised beef short ribs. It also complements aged hard cheeses like Comté, Parmigiano-Reggiano or mature cheddar, and earthy preparations featuring mushrooms or truffles. Serve at 16–18°C (60–64°F) to highlight the wine’s aromatic complexity and freshness. Decanting for 1–2 hours in its youth is recommended to soften the tannins and allow the bouquet to fully develop, especially from magnum.
