Description
A superb Pouilly-Fuissé from one of Burgundy’s most respected Chardonnay specialists, Dominique Cornin. Made from old vines planted in 1920 and crafted with biodynamic care, Les Plessys shows the depth, precision, and mineral drive that make great Mâconnais whites so compelling.
Tasting Notes
In the glass, this wine offers a bright, refined profile with a clear sense of purity and balance. The nose is expressive and inviting, with aromas of ripe peach, grilled pineapple, apple, citrus, and delicate white flowers.
On the palate, it is elegant and layered, combining generous fruit with a vibrant mineral backbone shaped by the limestone-rich soils. The finish is poised and persistent, and while it is already highly enjoyable now, it should continue to gain complexity with a few years of bottle age.
Production
Les Plessys comes from Chardonnay vines planted in 1920, giving the wine remarkable concentration and character. The grapes are farmed biodynamically, reflecting Dominique Cornin’s early commitment to sustainable viticulture, and are harvested by hand to ensure only the best fruit is selected.
After fermentation, half of the wine is matured in 600-liter oak barrels and the other half in 228-liter barrels, before spending 12 months in stainless steel tank. This combination of oak formats and tank aging helps preserve freshness while adding texture and nuance.
Food & Serving
This Pouilly-Fuissé is a natural match for roast chicken, creamy fish dishes, scallops, lobster, mushroom risotto, and poultry in buttery sauces. It also works beautifully with soft cheeses and refined vegetarian dishes such as asparagus tart or gratin dauphinois. Serve at around 10–12°C; decanting is not necessary, though a short time in the glass can help the wine open up.
