Dominique Cornin Pouilly-Fuissé 2023 is a fine introduction to one of Burgundy’s most celebrated Chardonnay appellations, showing just how much purity and character this region can deliver. Sourced from four parcels, including vines planted as far back as 1909, it reflects both deep-rooted heritage and Dominique Cornin’s longstanding commitment to biodynamic viticulture.
Tasting Notes
In the glass, it shows a beautiful golden hue, hinting at both ripeness and finesse. The nose opens with fresh lemon, exotic fruit, white flowers, and a subtle lift of anise, all carried with remarkable clarity.
On the palate, the wine is vibrant and graceful, with a lively, dancing texture and a long, refreshing mineral finish. Its balance of fruit, freshness, and saline precision gives it immediate appeal, while also suggesting a few years of positive development in bottle.
Production
The Chardonnay comes from four different parcels in Pouilly-Fuissé, with some old vines dating back to 1909. The vineyards are farmed biodynamically, an approach in which Dominique Cornin is widely regarded as a pioneer, with the aim of expressing the terroir as naturally as possible.
Harvesting is done by hand, with careful sorting before fermentation. The wine then matures on its lees in stainless steel tanks for a little over a year, preserving freshness and mineral definition while adding texture and depth.
Food & Serving
This is an excellent match for shellfish, lobster, roast poultry, creamy fish dishes, and classic Burgundy pairings such as escargot. Serve chilled, ideally around 10-12°C, and consider brief decanting only if you want to open up the aromatics a little further.
