Domaine Villet farms its Savagnin organically in the limestone-rich, marly soils of Arbois in the Jura, a cool, eastern French region famed for its distinctive oxidative and sous voile wines. The estate works with low yields and hand-harvested fruit to ensure optimal ripeness and concentration. For this cuvée, the grapes undergo extended skin contact, extracting color, tannin, and aromatic complexity, before being gently pressed and fermented with indigenous yeasts. The wine is then aged sous voile—under a natural film of yeast that develops on the surface of the wine in barrel—creating subtle oxidative notes, added texture, and remarkable longevity. Minimal sulfur and no unnecessary interventions are used, staying true to the domaine’s artisanal, organic philosophy.
Food & Serving
This Orange sous voile is a superb table wine, particularly with complex, savory dishes. It pairs beautifully with aged hard cheeses (especially Comté, Beaufort, or Gruyère), charcuterie, and nutty alpine dishes.
